Stackable Mousse Frame System allows for the assembly of cake layers and fillings into perfect even layers.
Once you produce the long rectangular strip it can sliced into individual portion sizes.
Inside frame dimensions: 22 1/2" x 3 1/2" (570 x 110mm)
Outside frame dimensions: 23 3/4" x 4 3/4" (600 x 120mm)
Individual Frame heights: 3/8", 9/16" and 3/4" (10, 15 and 20mm height)
Three Stackable Frames of different heights. Made of aluminum and plastic.
Support Sheet Base, made of stainless steel with frame locking notches.
Stainless steel Comb, to smooth surface of each preparation layer. One side has a 5mm comb to reduce the thickness of filling.
Total height when fully assembled 1 3/4" (45mm).
1. Start with a sponge cake layer. Fill the first frame with mousse or pastry cream, smooth with comb and allow to chill.
2. Affix the second frame, fill with a second flavor, smooth again and allow to chill. Do the same procedure for the third flavor.
3. Freeze whole if necessary and unframe. You obtain a dessert ready to cut into portion sizes, with perfectly uniform layers.
