Description
Spelt-Roggen-Rye is a rustic traditional German bread, a moist rye and spelt bread with a high malt content and a mildly sour flavor.
SchapfenMuhle Mixes are designed for convenience and consistency, a complete mix simply "Add Water & Yeast".
A blending of rye wholemeal flour, spelt wholemeal flour, barley malt and rye sourdough.
Bread has a malty dark crumb color as well as the moist crumb texture, which guarantees great freshness.

Recipe
Mix: 22 pounds
Water: 1.9 gallons
Dry Yeast: 3.5 ounces
Mix for 6 minute on slow. Fast speed for 3 minute.
Achieve a final dough temperature of 80°F
Allow for dough to rest 20-30 minutes
Scale dough into portion sizes 2 lbs.
A proofing basket is required, dust basket with rye flour and place dough in basket seam-side up.
Proof for 60 minutes (full proof). Remove from basket and score dough.
Bake at 465°F with steam, lower temperature to 375°F continue to baking for 55 minutes.
