Mix: 22 pounds
Water: 1.9 gallons
Dry Yeast: 6.3 ounces
Mix for 12 minutes on 1st speed.
Achieve a final dough temperature of 80°F
Bulk rest dough for 20 minutes.
Dough is quite moist and to work the dough your hands must be wet.
Scale dough into portion sizes 2 lbs. 8 ounces, roll into seed and place dough into greased loaf baking pans.
Proof for 60 minutes (full proof)
Bake at 475°F for 2 minutes (open damper), lower temperature to 375°F continue to baking for 65 minutes.
