Composed of two "perforated" sheetpans that slide together, enclosing the raw puff pastry dough inside.
During the baking process the puff pastry rises in-between the two sheetpans and creates a finished baked puff pastry that is perfectly golden brown and has a uniform even thickness throughout.
Prepare the raw puff pastry dough as required. Using a rolling pin rollout to an even thickness of 3/16 inch.
Place the puff pastry dough onto the bottom sheetpan of the baking system and dock the surface of the dough.
Slide the top sheetpan over and lock into place.
Place into the oven to bake. During the baking process the puff pastry will rise within and release steam, this will vent through the many perforated holes on both sheetpans.
Remove when golden brown and allow to cool.
