A masterful and delicious Premium Whole Grain Bread, a blending of rye wholemeal flour, puffed durum wheat grains, rye groats, rye sourdough dried, sunflower seeds, flax seeds.

SchapfenMuhle Mixes are designed for convenience and consistency, a complete mix simply "Add Water & Yeast".

A very moist bread which stays fresh a long time due to the proportion of puffed durum wheat kernels. Bread with a high oilseed content.
The refined cereal grains absorb a lot of the liquids used. Their grain structure is also retained by the kneading process. The dough's consistency is easy to process and designed for the classic tin loaf. The grains contained in the bread are soft and naturally improve its freshness. The crumb is a winner in every respect for its moistness and appearance with the high proportion of whole grains, as well as sunflower seeds and fax seeds.

Recipe
Mix:   22 pounds
Water:   2 gallons
Dry Yeast:   3.5 ounces
Mix for 1 minute on slow.  Fast speed for 1 minute.  Rest dough in mixer for 45-60 minutes.  Then mix on slow for 10 minutes.
Achieve a final dough temperature of 84°F
Dough is quite moist and to work the dough your hands must be wet.
Scale dough into portion sizes 2 lbs. 8 ounces, and place dough into loaf baking pans,
Mold into desired loaf shape, and roll into desired toppings.
Proof for 60 minutes (full proof)
Bake at 475°F for 2 minutes, lower temperature to 375°F continue to baking for 50 minutes.
