Pate de Fruit Vitpris is used for making Pate de Fruit / Fruit Gelees.
Product now "Double-Strength", use half the amount from previous version.
Basic recipe for Pate de Fruit:
1 kg Fruit Purée (any berries, apricot, mango, pear etc.)
1 kg Sugar
60g Glucose Syrup
60g Pate de Fruit Vitpris Gelling Agent "Double Strength"
4g Citric Acid (mixed with 2g water)
Mix the Vitpris with a little bit of the sugar. Warm the Fruit Purée with Sugar and Glucose. Then add the Vitpris and bring to a full-boil for 3-4 minutes. Finish with the Citric Acid. Pour into frames and allow to cool and set. Cut into bite-size portions. Roll in crystal sugar.
