Directions of Use:
1) Whisk together by hand 200 grams (7 ounces) Neutral Mousse Mix with 150 grams (5 ounces) of Water 70F degrees.
2) Add to above 400 grams (14 ounces) of your choice of Fruit Puree.
3) Whip 600 grams (21 ounces) of unsweetened Heavy Cream.
Fold the Whipped Cream into the above mixture.
4) Fill rings and molds with fruit mousse then refrigerate until set, about 3 hours.
The perfect amount of fruit puree is different for each fruit, due to differences in their water content.
If you use a fruit puree with high pulp content (for example Mango), then use less Neutral Mousse Mix.
If you use a fruit puree with high water content (for example Passionfruit), then use less water or no water.
