Liquid Invertase, is used in the confectionery industry to convert fondant into a liquid, which is a key additive to making liquid centers for Cherry Cordials.
Use approximately 1 1/2 teaspoons of Invertase to 1 pound of fondant.
Heat fondant to 100°F degrees, add Invertase, stir-in evenly.
