Gen'Mix Sponge Cake Mix, is a convenient and versatile cake mix for creating delicious Genoise sponge cakes, sponge cake layers for roulades / swiss rolls / jelly rolls and tres leches cake.

Gen'Mix is a cake mix for the production of soft, light and airy genoise sponge cakes with excellent texture and flavor.

Directions for Cakes rounds:

Gen'Mix.....35 ounces / 1000g

Eggs...........21 ounces / 600g

Hot Water....6.4 ounces / 180g

1) Using a wire whisk. Mix for 30 seconds on low speed, scrape down bowl, then mix 8 minutes on high speed.

2) Deposit batter into greased pans, filling 3/4 full.

4) Bake at 360F degrees for 20 minutes.

* Jelly Roll layer recipe is slightly different, recipe is on bag.
