DECOR PASTE
BUTTER 4 ounces
SUGAR 4 ounces
EGG WHITES 4 ounces
ALL-PURPOSE FLOUR 4 ounces
COCOA POWDER 1.5 ounce

1) Cream Butter and Sugar until just smooth.
2) Slowly add Egg Whites and Flour alternately.
3) Add sifted Cocoa Powder.
4) Blend until smooth.

Colored Decor Paste:
Replace Cocoa Powder with Flour.  Add desired coloring.

BACKING SPONGE
EGGS 10
ALL-PURPOSE FLOUR 10 ounces
BUTTER - melted & cooled 2.5 ounces
EGG WHITES 11.5 ounces
SUGAR 11 ounces

1)  Warm whip Eggs to 110F, over a simmering waterbath.
2)  Place on machine and whip on 3rd. speed until maximum volume.
3)  Stop and fold-in sifted Flour.
4)  In a small bowl combine Butter with 1 cup of the batter above. Then carefully fold back into the batter.
5)  Separately whip Egg Whites to soft peaks.  Slowly add Sugar and whip to stiff peaks.
6)  Fold into the batter.
7)  Spread 1/4” thick on top of frozen Decor Paste design.
8)  Bake at 425F for approximately 6-7 minutes.
Careful Do Not Overbake!!!

Yields:  Approximately 5 Full sheetpans.
