Traditional Ciabatta Bread, a 100%-mix for an original Italian bread.  The bread is simply fantastic! A rich crust with a coarse crumb and unique taste. Only natural ingredients, time and masterful skill.

Only the best wheat flour and durum semolina flour with a little sea salt. Olive oil is added at the end of mixing. Intensive kneading and long dough resting are the decisive factors for flavorful Ciabatta bread loaf.

SchapfenMuhle Mixes are designed for convenience and consistency, a complete mix simply "Add Water & Yeast".

Recipe
Mix:   22 pounds
Olive Oil:  10.6 ounces
Water:   2 gallons
Dry Yeast:   2.6 ounces
Mix for 5 minutes on 1st speed.  Fast speed for 14 minutes.  Add Olive Oil last minute of mixing.
Achieve a final dough temperature of 72°F
Bulk rest dough for a total of 60 minutes.  Place the dough on the work table with flour and fold into thirds.  Place into oiled plastic tub and repeat in 30 minutes.  Dough can also be placed into refrigerator for several days.
Scale dough into portion sizes 2 lbs. 8 ounces. 
Rest for 10-15 minutes
Mold into desired loaf shape
Proof for 30 minutes (full proof)
Bake at 465°F with steam, lower temperature to 350°F continue to baking for 20-22 minutes.
