Ascorbic Acid (vitamin C) is a natural additive, an antioxidant used as a preservative to control browning and discoloration of vegetables and fruits.
Increases the elasticity and tolerance of doughs, strengthens the gluten network.  Also added to breads to promote yeast growth.
