Dry Yeast: 3.5 ounces
Mix for 5 minutes on 1st speed. Then 3 minutes on 3rd speed.
Achieve a final dough temperature of 80°F
Bulk rest dough for 20 minutes.
Scale dough into portion sizes 1 lbs. 2 ounces.
Rest for 10-15 minutes
Mold into desired loaf shape. Roll into selected toppings.
Proof for 45-60 minutes (full proof)
Bake at 465°F for 2 minutes (open damper), lower temperature to 375°F continue to baking for 45-50 minutes.
