Mix: 22 pounds
Water: 1.92 gallons
Dry Yeast: 3.5 ounces
Mix for 12 minute on slow. Fast speed for 3-4 minute.
Achieve a final dough temperature of 80°F
Allow for dough to rest 30 minutes
Scale dough into portion sizes 2 lbs.
Mold into desired loaf shape, and top with rye flour.
Proof for 45 minutes (3/4 proof), the score bread.
Bake at 465°F with steam, lower temperature to 375°F continue to baking for 50 minutes.
