Tart Dough

 EGGS  3 each
 PASTRY FLOUR - sifted  3#
DOUGH:  1-2-3 Cookie Dough

1. Combine the sugar and butter in a hobart bowl. Mix with the paddle attachment until the mixture is smooth.
2. Add the room temperature eggs slowly. Mix till just combined and smooth.
3. Add the sifted pastry flour all at once, and mix on low speed till just blended.
4. Use dough for tarts and cookies.
5. Bake @ 350F.
