Scones

ALL-PURPOSE FLOUR 2#
 BAKING POWDER 1.25 ounces
 SALT .50 ounce
 SUGAR 2 ounce
 CRISCO SHORTENING 10 ounces
 MILK 16 ounces
 EGGS - beaten 6 ounce
METHOD: BISCUIT METHOD

1) Sift all dry ingredients together.
2) Cut in shortening into pea size pieces.
3) Add milk and egg mixture.
4) Toss ingredients together.
Turn on to the bench and knead gently 10-20 times.
However, do not overwork!
5) Makeup and bake at 425 degrees for 15 minutes.

British Scones: Add 1 cup raisins, blueberries, or raspberries.

New World Scones: Add 1 cup chocolate chips or crystallized ginger.

Savory Scones: Omit sugar. Add 1 cup cheddar cheese, 1 Tbsp. Herb's, 1/2 cup sautéed onions.

Citrus Honey Nut Scones: 1/2 cup finely chopped walnuts, 2 T lemon zest, 5 Tbsp. of honey which replaces the sugar, 1/2 cup orange juice in place of 1/2 cup of milk.
