The set includes: 1 - Base in 18/10 Stainless Steel, with special notches, overall sizes 18"x13" or 18"x26". 3 - Stackable Frames made out of aluminum of different heights: 3/8", 5/8" and 3/4" color coded: yellow, red and black . PROCEDURES:
1. Start with a sponge cake layer. Fill the first frame with mousse or pastry cream, smooth with a ruler and allow to chill.
2. Affix the second frame, fill with a second flavor, smooth again and allow to chill. Do the same procedure for the third flavor.
3. Freeze whole if necessary and unframe. You obtain a dessert ready to cut, where the layers are perfectly even, but you have greatly reduced production time. You can also layer sponge cake into the assembly of the cake.
The frame could also be used to produce the perfect size sheet of ganache, praline or fruit paste which could then be cut with a guitar. |
