Royal Icing

EGG WHITES  2.5 oz.
POWDERED SUGAR  1#
CREAM OF TARTAR  1/8 tsp.
LEMON JUICE  1 TBSP.

METHOD:

1) Place the well sifted 10X sugar in a mixing bowl with the cream of tartar.

2) With a paddle attachment, slowly add the egg white and lemon juice until a smooth paste is formed. Increase speed to medium, and mix for 5 minutes. **Incorporating air into the mixture, is the key to making a light and fluffy icing.

3) Keep the unused icing covered with a damp cloth, then covered with plastic wrap.
