The top surface is non-stick, the bottom surface is skid resistant. Making this an ideal surface for kneading bread dough, rolling-out all kinds of pastry dough's, working and transferring rolled fondant, gum paste, pastillage, marzipan, confectionery work etc. Although the Roll'Pat® may look like a Silpat®, in fact they are quite different products. Roll'Pat is not designed for oven use, but can withstand extreme temperature ranges.
