Pizzelle

EGGS 6
SUGAR 12 ounces
BUTTER - melted & cooled 8 ounces
PASTRY FLOUR 14 ounces
BAKING POWDER 1 Tablespoon
SALT 1/4 teaspoon
VANILLA EXTRACT 1 Tablespoon
ALMOND EXTRACT 2 teaspoon
optional: ANISE EXTRACT 4 drops

Method:

1) In a bowl whisk together the eggs and sugar.

2) Whisk in the melted butter and extracts.

3) Sift together the pastry flour, baking powder and salt, and add this to the egg mixture.

4) Allow the mixture to rest for 30 minutes.

5) Using a Pizzelle Iron, drop a tablespoon of batter into each form and close. Bake until golden brown about 1 minute.

6) Immediately shape into bowl shapes or cones. Store in an airtight Tupperware container.
