| PatisFrance brings you an "all new" powder preparation for making delicious Joconde Sponge quickly and easily.
Joconde is a classic soft sponge cake made from finely ground
almonds. The sponge batter is baked into thin sheets a 1/4" thick. They are used to build tortes layered with variety of fillings such as Opera Torte. The sponge can also be
decorated with a colorful pattern or stencil prior to baking. The finished
sponge cake is then cut into long strips and lined into cake rings.
Directions:
1) 1000g Joconde powder mix, 350g Water and 200g Eggs.
2)
Combine ingredients and whisk on high speed for 6 minutes.
3)
Prepare a sheetpan with a Silpat® Silicone Mat.
4) Spread 1 to 1 1/2 pounds of batter even over the sheetpan.
5) Bake at 425F degrees, for 7 minutes with the oven vent closed.
